To start, Smoked Anaheim Chili (cacao mole / avocado / chipotle cucumber / kalahari salt / omega chips), my favorite dish of the night!
Lapsang Souschong Wild Mushroom (fresh corn polenta / hemp maqui berry / kale chip / english pea dust).
Fauxlafel (lemon mousseline / cilantro gelee / red earth acai / yuzu garden).
Truffle Flan (black sesame tuile / calamata / pomegranate / golden & goji berries).
Molten Cookie Dough (lucuma yacon gelato / tart cherry / persimmon gastrique).
Pumpkin Gelee (strawberry leather / candied rosemary & cacao nibs / sweet corn / mango shards).
Julian Cox was mixing the drinks of the night to match with the vegan dishes.
Ani Phyo and special guest chef assisting her was Alex Reznik.
This was a special night, they made cranes!

As in any environment where there is very little ambient light, you will need a fast lens. In this case the nifty fifty came along for the ride. ISO 3200 and f/1.4 made it possible to capture all the visually stimulating food that Ani and her team came up with. Eating the food was just as fun as taking the pictures!
Ani is a prominent expert in the raw food community and has developed raw vegan menus for Carnival Cruise Lines, ADIDAS, STOMP, and Whole Foods Markets, among others. While a consultant for the ADIDAS Fitness Center, Ani drew upon her experience as a former high school athlete and her thorough knowledge of nutrition, to show the ADIDAS athletes how “fueling up” with raw nutrition aides in optimal performance.
